DIRECTIONS
1) In a medium saucepan bring the wine, vegetables, herbs and garlic to a simmer and continue until almost all of the liquid is evaporated.
2) Add the peppercorns, the Port and the stock and simmer for for another 15 minutes or until the sauce is reduced to the consistency of Maple syrup.
3) Strain the sauce through a sieve and serve.
INGREDIENTS
1 cup red wine
1/3 cup sliced shallots
1/2 cup sliced carrots
1/4 cup sliced mushrooms
10 sprigs Italian parsley
2 sprigs thyme
1 bay leaf
2 tablespoons sliced garlic
6 black peppercorns
2 cups beef stock
1/2 cup Port
